Oatmeal Raisin Cookies

One of the many things I don’t understand in life is how some people don’t love Oatmeal Raisin Cookies. These ones are soft, chewy, and have the perfect warm flavor to add to your day.

Start by preparing the dry ingredients. Whisk together the flour, cinnamon, nutmeg, baking soda, and salt in a medium-sized bowl.

In the bowl of a stand mixer with the paddle attachment, beat the butter and sugars until light and fluffy. Add in the eggs and vanilla and mix on low until combined. Then dump the dry ingredients into the wet and mix on low until just combined.

Add in the oats to the batter and mix by hand with a silicone spatula. Then add in the raisins and mix by hand with the spatula.

With a cookie dough scooper or by hand, scoop the dough into 1.5 tablespoon balls and place on a baking sheet that is lined with parchment paper — about 6 to a baking sheet. Bake for 11-12 minutes at 350° F. When finished and removed from the oven, let the cookies rest on the baking sheet for a couple minutes before transferring to a wire rack to finish cooling.


Some ingredients notes

Cinnamon and Nutmeg – These spices are optional, so feel free to leave them out. I find that they add a great warm flavor to the cookies.

Oats – You can’t have Oatmeal Raisin Cookies without the oats! Make-sure to use old fashioned whole rolled oats, and we’ll use lots of them.

Raisins – The most common raisins come from Thompson Seedless grapes. If you have another favorite raisin, feel free to use those!


Tips

  • I highly recommend mixing in the oats and raisins by hand. It may be a little bit hard to do in the stand mixer, and you want to make sure the raisins don’t get crushed.

  • 1 1/2 cups all-purpose flour

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned whole rolled oats
  • 1 1/2 cups raisins

Instructions

  1. Preheat the oven to 350° F and line baking sheets with parchment paper.

  6. Bake for 11-12 minutes. Once removed from the oven, let sit on the pan for a couple minutes before transferring to a wire rack to finish cooling.
