Blueberry Crumb Bars

These Blueberry Crumb Bars are a perfect dessert to have during the summer, and they’re so easy to make. Using fresh blueberries, they’re light, refreshing, and will soon become a go-to recipe!

Start the crust by whisking together the flour, baking powder, and salt. Add the cold diced butter and cut it into the flour mixture with a pastry cutter until it forms a crumb-like mixture. In a large bowl, whisk together the sugar, egg, and vanilla extract until combined. Add the dry ingredients to the wet and mix until combined.

In a separate bowl, mix together the blueberries, lemon juice, sugar, and cornstarch. Take about 2/3 of the dough and press it into an 8″x8″ baking pan in an even, flat layer. Spread the blueberry mixture on top. Then sprinkle the rest of the dough of top in smaller pieces.

Bake these Strawberry Crumb Bars for 40-45 minutes. The top will be starting to get light brown, and the blueberry filling will be bubbling. Allow to cool completely before removing from the pan. I like to store these in the fridge and eat them cold.

Blueberries – I highly recommend using fresh blueberries for this recipe.


Tips

  • The dough may be a bit sticky, so I think it’s easiest to use your fingers to press 2/3 of it into the baking pan for the bottom crust.
  • If you don’t have a pastry cutter, you can also try using a fork to cut the butter into the flour mixture.
  • I like to store these in the fridge and eat them cold, but popping them in the microwave and topping with ice cream is also amazing!

The Crust

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 11 tablespoons unsalted butter, cold and diced
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

The Filling

  • 3 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350° F. Grease and line an 8″x8″ baking pan with parchment paper with some hanging over the edges so it’s easy to remove the bars from the pan.
  2. In a medium-sized bowl, whisk together the flour, baking powder, and salt. Add the diced butter and cut into the mixture with a pastry cutter until the mixture is crumb-like.
  3. In a large bowl, whisk together the sugar, egg, and vanilla extract until combined. Add the flour mixture to the wet ingredients and mix with a spatula until combined.
  4. In a separate bowl, mix together the blueberries, sugar, lemon juice, and cornstarch.
  5. Take about 2/3 of the dough and press it into the bottom of the baking pan with your fingers until it’s in a flat, even layer. Spread the blueberry mixture on top. Sprinkle the rest of the dough on top in small pieces.
  6. Bake for 40-45 minutes. The top will start to get light golden-brown, and the blueberry filling will be bubbling. Allow the bars to cool completely before removing from the pan.
