The Crust
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 11 tablespoons unsalted butter, cold and diced
- 2/3 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
The Filling
- 3 cups fresh blueberries
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 350° F. Grease and line an 8″x8″ baking pan with parchment paper with some hanging over the edges so it’s easy to remove the bars from the pan.
- In a medium-sized bowl, whisk together the flour, baking powder, and salt. Add the diced butter and cut into the mixture with a pastry cutter until the mixture is crumb-like.
- In a large bowl, whisk together the sugar, egg, and vanilla extract until combined. Add the flour mixture to the wet ingredients and mix with a spatula until combined.
- In a separate bowl, mix together the blueberries, sugar, lemon juice, and cornstarch.
- Take about 2/3 of the dough and press it into the bottom of the baking pan with your fingers until it’s in a flat, even layer. Spread the blueberry mixture on top. Sprinkle the rest of the dough on top in small pieces.
- Bake for 40-45 minutes. The top will start to get light golden-brown, and the blueberry filling will be bubbling. Allow the bars to cool completely before removing from the pan.
