Blueberry Crumb Bars

The Crust

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 11 tablespoons unsalted butter, cold and diced
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

The Filling

  • 3 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350° F. Grease and line an 8″x8″ baking pan with parchment paper with some hanging over the edges so it’s easy to remove the bars from the pan.
  2. In a medium-sized bowl, whisk together the flour, baking powder, and salt. Add the diced butter and cut into the mixture with a pastry cutter until the mixture is crumb-like.
  3. In a large bowl, whisk together the sugar, egg, and vanilla extract until combined. Add the flour mixture to the wet ingredients and mix with a spatula until combined.
  4. In a separate bowl, mix together the blueberries, sugar, lemon juice, and cornstarch.
  5. Take about 2/3 of the dough and press it into the bottom of the baking pan with your fingers until it’s in a flat, even layer. Spread the blueberry mixture on top. Sprinkle the rest of the dough on top in small pieces.
  6. Bake for 40-45 minutes. The top will start to get light golden-brown, and the blueberry filling will be bubbling. Allow the bars to cool completely before removing from the pan.
