Chocolate Chip Cookie Bars

I love making these Chocolate Chip Cookie Bars when I want a chocolate chip cookie but don’t want to spend time scooping the dough to form each cookie. These are gooey, golden brown, and will be finished so quick since we bake them all in one pan.

To make the dough, first whisk together the flour, baking soda, salt, and cornstarch. Then in a large bowl, whisk together the melted butter and sugars until combined into a thick mixture. Add in the eggs and vanilla and whisk until combined.

Pour the dry ingredients into the wet and mix with a spatula until just combined. Then add in the chocolate chips and mix until combined.

Spread the batter into an 8″x8″ baking pan that is greased and lined with parchment paper. Sprinkle some extra chocolate chips on top and gently press them into the dough. Bake at 350° F for 35 minutes.

These Chocolate Chip Cookie Bars will be golden brown and so chocolatey on the inside. I love to heat them up in the microwave and top with vanilla ice cream.


Some ingredients notes

Chocolate Chips – For a classic cookie, I like to use semi-sweet chocolate chips, but feel free to substitute in whatever chocolate you like!

Cornstarch – This will help to keep the cookie bars chewy.

Eggs – Using room temperature eggs will help for them to fully incorporate and mix into the dough. To quickly get eggs to room temp, place them in a bowl of warm water for a few minutes.


Tips

  • To make it easy to cut and serve the cookie bars, line the baking pan with parchment paper so you can lift them out of the pan.
  • I recommend baking these in a metal baking pan, as it may not bake the same in a glass pan.
  • These will end up pretty thick, especially the edges. If you want thinner cookies, you can use a 9″x9″ pan, just adjust the baking time as needed.

Description

These Chocolate Chips Cookie Bars are gooey and golden brown. The best part? Making them in a pan takes out so much time of scooping dough for individual cookies.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips, plus extra for additional topping

Instructions

  1. Grease and line a 8″x8″ metal baking pan with parchment paper so that some is hanging over the edge. This will make it easy to lift the cookie bars out of the pan. Preheat the oven to 350° F.
  2. In a medium bowl, whisk together the flour, baking soda, cornstarch, and salt.
  3. In a large bowl, whisk together the sugars and melted butter until combined. The mixture will be thick. Add in the eggs and vanilla and mix until combined.
  4. Add the dry ingredients to the wet and mix with a spatula until just combined. Add in the chocolate chips and  mix until combined.
  5. Spread the cookie dough into the prepared pan so it’s in an even layer. Then sprinkle an extra handful of chocolate chips on top and gently press them into the dough a little bit.
  6. Bake at 350° F for around 35 minutes. The top will be golden brown and a toothpick inserted in the center comes out mostly clean.
  7. Let the pan cool on a wire rack before removing the cookie from the pan and cutting.
