Christmas Brownies

These brownies are one of my favorite parts of Christmas. Growing up, I made these every year with my mom and still continue the tradition today. They’re a simple and easy box mix brownie with a peppermint icing and thin chocolate layer on top. To me, these are the perfect Christmas Brownies.

To start, make a 13″x9″ pan of fudge brownies from a box mix. Bake as according to instructions for cake-like brownies. Once cooled, start on the peppermint icing.

In a small pot, melt the butter. Once melted, add the powdered sugar and mix until combined. Add in the vanilla extract, peppermint extract, and green food coloring. Mix until combined and smooth. Quickly pour over the brownies. Tilt the pan so that the entire pan is covered. This will set quickly, so it’s important to work fast.

Once the icing has set, start on the chocolate. In a small pot, melt 2 tablespoons of butter and 2 ounces of unsweetened baking chocolate. Once melted, pour on top the the brownies. Tilt the pan so that as much of the brownies is covered as possible. This chocolate will set even faster, so do this quickly!

Move these Christmas Brownies to the fridge to let the chocolate set before cutting!


Some ingredients notes

Box mix brownies – To keep it easy, we’ve always used a box mix, and I usually opt for a fudge brownie mix.

Green food coloring – This will give it a good Christmas green color, but use whatever color you find festive!


Tips

  • When covering the brownies with the icing and chocolate, it’s important to move quickly, as these layers will set very quick.

Ingredients

Units Scale
  • 1 box mix of Fudge brownies, baked as instructed for cake-like brownies
  • 1/2 cup and 2 tablespoons unsalted butter, separated
  • 3 1/2 to 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 35 drops green food coloring
  • 2 ounces unsweetened baking chocolate

Instructions

  1. Bake and cool a mix of cake-like fudge brownies in a 13″x9″ pan.
  2. Melt 1/2 cup of butter in a small pot. Add in the powdered sugar and mix until combined. Stir in the vanilla extract, peppermint extract, and food coloring. Mix until smooth.
  3. Quickly pour the icing over the brownies. Tilt the pan so that all of the brownies are covered. Let sit.
  4. In a small pot, melt 2 tablespoons of butter and 2 ounces of unsweetened baking chocolate.
  5. Quickly pour the chocolate mixture over and tilt the pan to cover as much area with chocolate.
  6. Chill to let the chocolate set before cutting.
