These Cherry Crumb Bars are a perfect treat to make when cherries are in season. The filling is juicy and sweet, and the crust and topping is light and buttery. They’re sure to be a hit!

To start, remove the cherry pits and slice them in half. Toss the cherries with the cornstarch and lemon juice in a bowl. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
In a large bowl, mix the melted butter, sugar, and vanilla extract. Add the dry ingredients to the wet and mix with a fork until it comes together in a crumb-like mixture. Take 2/3 of the dough and press it into an even layer in an 8″x8″ baking pan that is greased and lined with parchment paper. Spread the cherries evenly on top. Then sprinkle the remaining dough on top.
Bake for about 23 minutes or until the top is golden brown. Allow the Cherry Crumb Bars to cool and set before removing from the pan to cut and serve.

Ingredients
- 2 1/2 cups fresh cherries (pitted and sliced in half)
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 cup unsalted butter, melted and cooled
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Grease an 8″x8″ baking pan and line with parchment paper. Preheat the oven to 375℉.
