- 2 1/2 cups fresh cherries (pitted and sliced in half)
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 cup unsalted butter, melted and cooled
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Grease an 8″x8″ baking pan and line with parchment paper. Preheat the oven to 375℉.
- In a medium-sized bowl, toss the cherries with the cornstarch and lemon juice.
- In another bowl, whisk together the flour, baking soda, baking powder, and salt.
- In a large bowl, mix the melted butter, sugar, and vanilla extract. Add in the dry ingredients and combine with a fork until it comes together in crumb-like mixture.
- Take 2/3 of the dough and press into an even layer in the prepared baking pan. Spread the cherries evenly on top. Then take the remaining dough and sprinkle on top.
- Bake for about 23 minutes or until the top is golden brown.
