Cherry Crumb Bars

Ingredients

  • 2 1/2 cups fresh cherries (pitted and sliced in half)
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Grease an 8″x8″ baking pan and line with parchment paper. Preheat the oven to 375℉.
  2. In a medium-sized bowl, toss the cherries with the cornstarch and lemon juice.
  3. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  4. In a large bowl, mix the melted butter, sugar, and vanilla extract. Add in the dry ingredients and combine with a fork until it comes together in crumb-like mixture.
  5. Take 2/3 of the dough and press into an even layer in the prepared baking pan. Spread the cherries evenly on top. Then take the remaining dough and sprinkle on top.
  6. Bake for about 23 minutes or until the top is golden brown.
