Oatmeal Raisin Cookies

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, room temperature
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned whole rolled oats
  • 1 1/2 cups raisins

Instructions

  1. Preheat the oven to 350° F and line baking sheets with parchment paper.
  2. Whisk together the flour, cinnamon, nutmeg, baking soda, and salt in a medium sized bowl.
  3. In the bowl of a stand mixer with the paddle attachment, beat together the butter and sugars until light and fluffy. Then add in the eggs and vanilla and beat on low until combined.
  4. Add the dry ingredients to the wet and mix on low until just combined. Then add in the oats and mix by hand with a spatula until combined. Add in the raisins and mix in with the spatula.
  5. Scoop into 1.5 tablespoon balls and place about 6 to a baking sheet.
  6. Bake for 11-12 minutes. Once removed from the oven, let sit on the pan for a couple minutes before transferring to a wire rack to finish cooling.
