Peach Cobbler

This Peach Cobbler is a perfect easy dessert to make during the summertime. It’s sweet, simple, and whips together so quickly.

Start by tossing the peach slices with brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and salt. Spread the peaches in an 8″x8″ glass or ceramic baking dish. Bake for 7 minutes at 425° F.

While the peaches are baking, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt in a medium-sized bowl. Add in the diced, cold butter and cut it into the flour mixture with a pastry cutter until it all comes together to a sand-like mixture. Pour the hot water in and mix in until the dough comes together.

When the peaches are done baking, drop spoonfuls of the dough on top of the peaches. Sprinkle some extra granulated sugar and cinnamon on top. Bake for 20-22 minutes or until the top of the cobbler is golden brown. Let sit for about 5 minutes before serving and topping this Peach Cobbler with ice cream!

Peaches – This is best when using fresh peaches when they’re in season

Ground Cinnamon and Nutmeg – These spices will give a warm flavor to the cobbler.

The Peach Filling

  • 3 fresh peaches, sliced
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • A dash of nutmeg
  • 1 teaspoon lemon juice
  • 1 1/2 teaspoon cornstarch
  • A pinch of salt

The Cobbler

  • 1/2 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 tablespoons brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons unsalted butter, cold and diced
  • 1/8 cup hot water
  • A sprinkle of granulated sugar and cinnamon

Instructions

  1. Preheat the oven to 425° F.
  2. In a medium sized bowl, toss the sliced peaches with the brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and salt.
  3. Pour the peaches into an 8″x8″ glass or ceramic baking pan and bake for 7 minutes.
  4. While the peaches are baking, combine the flour, granulated sugar, brown sugar baking powder, and salt in a separate bowl. Add in the diced butter and cut in with a pastry cutter until it comes together in a sand-like mixture. Stir in the hot water until the dough comes together.
