Peanut Butter and Jelly Bars

Peanut butter and jelly — one of the most classic combos. PB&Js were a staple in my house growing up, and I still love them today. These Peanut Butter and Jelly Bars are a PB&J wrapped up into a small dessert. Sweet, nutty, all around delicious.

To start putting these together, whisk together the flour, baking powder, and salt. Then in a bowl of a stand mixer with the paddle attachment, beat the butter and sugars until light and fluffy. Add the egg, vanilla extract, and peanut butter and mix until combined.

Add the dry ingredients to the wet and mix until just combined. Take about 2/3 of the dough and press it into an even layer in a 8″x8″ baking pan that’s greased and lined with parchment paper. Bake for about 12 minutes.

Once baked, remove from the oven and spread the jelly in an even layer on top of the bottom crust. Take the remaining 1/3 of the dough and sprinkle it in globs on top of the jelly. Return to the oven for 45 – 50 minutes. The cookie on top will be golden brown.

Allow the Peanut Butter and Jelly Bars to cool completely before removing from the pan and cutting. I love to store these in the fridge and eat them cold!


Some ingredients notes

Jelly – My favorites are raspberry and strawberry, but use whatever jelly you would make a PB&J with!

Peanut Butter – Make sure to use a regular creamy no-stir peanut butter. Most natural peanut butters won’t work for this recipe.


Tips

  • Baking the crust for a bit before adding the jelly on top will allow for it to not be too doughy.
  • To make to easy to remove these bars from the pan, line with parchment paper and have some handing over the edge so you can lift it out.
  • Once removed from the oven, the jelly will continue to set until its cooled.

Ingredients

  • 1 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg, room temperature
  • 1 cup creamy peanut butter
  • 1 1/2 cup jelly (I love raspberry)

Instructions

  1. Grease an 8″x8″ baking pan and line parchment paper so that some hangs over the edge, making it easy to lift the bars out. Preheat the oven to 350° F.
  2. In a medium-sized bowl, whisk together the flour, baking powder, and salt.
  3. In the bowl of a stand mixer with the paddle attachment, beat the butter and sugars until light and fluffy. Add in the vanilla extract, egg, and peanut butter and mix until combined.
  4. Add the dry ingredients to the wet and mix until just combined.
  5. Take about 2/3 of the dough and press it into an even layer in the baking pan and bake for 12 minutes. Remove the pan from the oven and spread the jelly in an even layer on top of the crust. With the remaining dough, sprinkle it in globs on top of the jelly.
  6. Bake for an additional 45-50 minutes. The cookie on the top will be golden brown.
  7. Let sit until completely cool before removing from the pan and cutting. Store these in the fridge if you like them cold!
