Description
These Peanut Butter Strawberry Bars are a classic PB&J wrapped into a dessert and have fresh strawberries mixed in. They’re a perfect summer-time dessert.

- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1 large egg, room temperature
- 1 cup creamy peanut butter
- 1 cup strawberry preserves
- 1/2 cup chopped strawberries
Instructions
- Grease an 8″x8″ baking pan and line parchment paper so that some hangs over the edge, making it easy to lift the bars out. Preheat the oven to 350° F.
- In a medium-sized bowl, whisk together the flour, baking powder, and salt.
- In the bowl of a stand mixer with the paddle attachment, beat the butter and sugars until light and fluffy. Add in the vanilla extract, egg, and peanut butter and mix until combined.
- Add the dry ingredients to the wet and mix until just combined.
- Take about 2/3 of the dough and press it into an even layer in the baking pan and bake for 12 minutes.
- Mix the chopped strawberries with the strawberry preserves. Once the bottom crust has baked, remove the pan from the oven and spread the strawberry mixture in an even layer on top of the crust. With the remaining dough, sprinkle it in globs on top of the jelly.
- Bake for an additional 45 minutes. The cookie on the top will be golden brown.
- Let sit until completely cool before removing from the pan and cutting. I recommend storing these in the fridge to keep them cold.
