Strawberry Crumb Bars

These Strawberry Crumb Bars are so light, pillowy, and the strawberries have such a fresh flavor. These are a perfect dessert to make for the summer!

Start the crust by whisking together the flour, baking powder, and salt. Add the cold diced butter and cut it into the flour mixture with a pastry cutter until it forms a crumb-like mixture. In a large bowl, whisk together the sugar, egg, and vanilla extract until combined. Add the dry ingredients to the wet and mix until combined.

In a separate bowl, mix together the chopped strawberries, lemon juice, sugar, and cornstarch. Take about 2/3 of the dough and press it into an 8″x8″ baking pan in an even, flat layer. Spread the strawberry mixture on top. then sprinkle the rest of the dough of top in smaller pieces.

Bake these Strawberry Crumb Bars for 40-45 minutes. The top will be starting to get light brown, and the strawberry filling will be bubbling. Allow to cool completely before removing from the pan.


Some ingredients notes

Strawberries – I think that fresh strawberries are absolutely key in making this dessert taste so good, but feel free to try out frozen too!


Tips

  • The dough may be a bit sticky, so I think it’s easiest to use your fingers to press 2/3 of it into the baking pan for the bottom crust.
  • If you don’t have a pastry cutter, you can also try using a fork to cut the butter into the flour mixture.

The Crust

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 11 tablespoons unsalted butter, cold and diced
  • 2/3 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

The Filling

  • 3 cups chopped strawberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350° F. Grease and line an 8″x8″ baking pan with parchment paper with some hanging over the edges so it’s easy to remove the bars from the pan.
  2. In a medium-sized bowl, whisk together the flour, baking powder, and salt. Add the diced butter and cut into the mixture with a pastry cutter until the mixture is crumb-like.
  3. In a large bowl, whisk together the sugar, egg, and vanilla extract until combined. Add the flour mixture to the wet ingredients and mix with a spatula until combined.
  4. In a separate bowl, mix together the chopped strawberries, sugar, lemon juice, and cornstarch.
  5. Take about 2/3 of the dough and press it into the bottom of the baking pan with your fingers until it’s in a flat, even layer. Spread the strawberry mixture on top. Sprinkle the rest of the dough on top in small pieces.
  6. Bake for 40-45 minutes. The top will start to get light golden-brown, and the strawberry filling will be bubbling. Allow the bars to cool completely before removing from the pan.
