Triple Berry Pie Bars

Want a berry pie but don’t want the hassle of making the whole thing? Make these easy and delicious Triple Berry Pie Bars.

Using a frozen berry blend and a crust and crumble topping that’s from the same dough, these pie bars are hassle free and come together in no time.

To make the crust and topping, whisk together the flour, oats, brown sugar, baking powder, salt, and cinnamon. Then add in the melted butter and vanilla extract and combine until the dough comes together. Take about 2/3 of the dough and press it down into a greased and lined 8″x8″ baking pan until it’s in a flat, even layer. Bake the crust for about 10 minutes at 350° F, and set aside the remainder 1/3 of dough.

While the crust is baking, start on the filling. Set aside the cornstarch in a small bowl, and in a small/medium sized pot, combined the frozen berries, sugar, and lemon juice on low heat. When the berries start to release some of their juice, take about 1/4 cup of juice and add it to the cornstarch. Mix the cornstarch and berry juice until it’s dissolved. Then add that mixture back into the pot with the berries. Stir occasionally and let the mixture come to a low boil. Cook for about 10 minutes.

Spread the filling on top of the warm crust. Then crumble and sprinkle the remaining dough on top and gently press down onto the filling. Bake for 40-50 minutes until the topping is golden brown and the filling is bubbling slightly.

After cooling, our Triple Berry Pie Bars will be ready to eat and serve!


Some ingredients notes

Mixed Berries – One thing that makes this recipe so easy is that we’ll use frozen mixed berries. Pick up a bag that’s a mixture of raspberries, blackberries, and blueberries, and you’ll be all set.

Cinnamon – Adding a touch of cinnamon to the crust/topping mixture gives these bars a warm, sweet flavor.

Lemon Juice – This will help to make sure that the filling isn’t too sweet, and it goes well with the berries.


Tips

  • When the bars are finished baking, the topping will be golden brown and the filling will be slightly bubbling
  • To get clean edges when cutting the bars, wipe off the knife after each slice.
  • I love to pop these bars in the microwave for a few seconds and top with vanilla ice cream.

Ingredients

The Crust & Topping

  • 1 1/4 cups all-purpose flour
  • 3/4 cup old fashioned rolled oats
  • 1/3 cup brown sugar
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 8 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

The Triple Berry Filling

  • 3 cups mixed berries (raspberries, blackberries, and blueberries), frozen
  • 1 1/2 teaspoons cornstarch
  • 2 teaspoons lemon juice
  • 1/2 cup granulated sugar

Instructions

  1. Grease and line a 8″x8″ baking pan with parchment paper, making sure that the parchment paper hangs over the edge of the pan so that it’s easy to lift and remove the bars from the pan. Preheat the oven to 350° F.

The Crust & Topping

  1. Whisk together the flour, oats, brown sugar, baking powder, salt, and cinnamon in a bowl until combined. Add in the melted butter and vanilla extract and mix until the dough comes together.
  2. Take about 2/3 of the dough and drop it into the lined baking pan. Press down on the dough with your fingers so that it’s in a flat, even layer covering the entire pan. Set aside the remaining 1/3 of the dough.
  3. Bake the crust for 10 minutes. Then, remove to slightly cool.

The Triple Berry Filling

  1. Measure out the cornstarch into a small bowl and set aside.
  2. In a small to medium sized pot, add the frozen berries, lemon juice, and sugar and cook on low heat until the berries start to release some of their juice.
  3. Take about 1/4 cup of the juice and add it to the bowl with the cornstarch. Stir until the cornstarch is dissolved, and then add the mixture back into the pot with the berries.
  4. While stirring occasionally, let the mixture come to a low boil and cook for about 10 minutes. The filling will become thicker.
  5. Evenly spread the filling on top of the warm crust. Crumble the dough that was set aside so that it’s in small pieces. Sprinkle and gently press it on top of the filling.
  6. Bake the bars for 40-50 minutes. The topping should be golden brown and the filling will be bubbling. When done, place the pan on a wire rack to cool. Once completely cooled, remove the bars from the pan, cut, and serve.
